Skillet Diner

My sister was telling me about Skillet Diner and how they have really good burgers and bacon jam!! Unfortunately, I didn't get to try either of those because my eye was set for waffles and fried chicken which I also did not get. I changed my mind last minute and got the waffle and pork belly. I love pork belly! The waffle was made of cornmeal and it came with an egg. What I liked about this was that it didn't come with maple syrup because the pork belly was glazed and cooked with maple which I thought was genius!

As for the diner, it's basically a modern diner. They started off as a food truck and then opened two locations. The atmosphere is awesome and they play the jams from Biggie to Ciara and lots of Beyonce and Jay Z. I would definitely go back and try other stuff on the menu. I'd also like to mention that the serve Fonte coffee, a coffee that I like! However, 3 bucks for coffee is $$, but I got 2 cups so I guess it's ok.

It's Been Too Long

It's been three months since the last time I've posted anything. So much has happened that I've completely forgot about this. I'm pretty sure I've experience a lot of delicious foods within the last three months. I don't think I would be able to remember any of it so I'm going to start off with the most recent experience that is worth talking about.

Yesterday we celebrated my sisters father in laws 65th birthday with all his close friends and had a private room in Canlis. A very popular and high end restaurant. It's so fancy that there's a dress code and I work at a pretty nice, classy, expensive steak house, but there's no dress code. Canlis is top notch fancy. Anyways, when everyone arrived they had the servers come around with appetizers. Each appetizer was served on a spoon, similar to the asian spoons you use to eat soup. Let me tell you, they were amazing! It tasted so good! There was tiny crab cakes, teriyaki beef, smoked salmon and quiche. I didn't get to take a picture of any of the food except the dessert :( For our entrees we had three choices halibut, roasted herb chicken or filet mignon and of course the majority of the party chose the filet mignon. I personally chose it because I love steak and I wanted to compare it to The Metropolitan Grill.  The filet mignon was good and it had this sauce, but I have no idea what it was. Possibly a sweet potato puree? Anyways there was a little bit of sides that came with it, but what I really enjoyed was the sides that they brought out for all of us to share which was zucchini and mushrooms. I love mushrooms! One this I thought was a bit strange was that the servers were on point. They came out with everyones plate and set them in front of us at the same time and they don't do that until everyone is seated. Apparently their service is impeccable. They even fold your napkins when you get up from your chair. Anyways back to the filet, I like The Mets better because it's more flavorful.

On to the desserts we had chocolate cake with chocolate mousse that we brought and they provided the creme brûlée, passion fruit tart and chocolate mousse covered in dark chocolate and caramel. Super rich! And of course coffee. I recommend Canlis if you want to spend $$$$$

1 1/2 flour

350 degrees for 1 hour

Mothers Day Brunch

I had the prosciutto and veggie fritada and we all shared banana fosters French toast which is so freaking yummy! Everything at this cafe (forgot the name) is organic.

Creamy Pasta

Yesterday I cooked dinner for my sister. We had left over broccoli and wanted to get rid of it so I made the pasta that my mom always makes. It's super easy all you need is penne, alfredo sauce and spaghetti sauce. Mix it all up and BAM, you got creamy pasta. I put in shrimp, broccoli and baby tomatoes. Try putting chicken too, its amazing!

Salmon Patties!

I made salmon patties. It's super easy to make!

Just chop up salmon and add shallots, cilantro and your choice of seasoning. Put it in the refrigerator for 20 mins and then make it into a party size and fry it. Have it with some fresh greens and with caeser dressing! Enjoy!

The Metropolitan Grill

I moved to Seattle from California within one week. I've been to Seattle plenty of times and I never thought I'd ever live here. Anyways I moved here to work at a very popular steak house, like everyone and their mother's come here.

For the first 5 days its just training and when your training you get a whole meal, for free. I only took a picture of a few things I've had because I didn't want to be a food camara whore, but let me tell you want I had. But apparently I took a pic of everything the chicken and fish n chips.

1st day - top sirloin with mash potatoes, onion rings and white chocolate coconut cake. All so delicious.

2nd day - french onion soup (btw I share with my trainer lol) ceaser salad, roasted chicken with rooted vegetables and creme brulee.

3rd day - southwest chop salad with chicken and fish and chips. I asked that we skip the dessert, couldn't do it.

4th day - on weekends were not open for lunch but I got to go in early to answer phoned. The kitchen cooks lunch for themselves and offers us food. So I had chicken tenders with potato wedges. Then for dinner I had calamari, pork chops, cream spinach and carrot cake with makers mark ice cream. (This had to be my favorite meal) I don't like carrot cake but this tasted like Christmas!)

5th day - finally I had teriyaki tenderloin bites, salmon and Mac and cheese. Unfortunately I didn't get dessert because I got to leave early and the time I left the kitchen was busy.
Today was my first day alone and I get an employee meal for free. I just had a steak salad which was pretty good!

I'm definitely going to get fat. Sike!

Chinese Take Out?

Nope. Today I made broccoli stir fry. It was so good and while I was cooking this my dad was making fried rice. My mom was across the street with the neighbors and when she came back she saw it on the table and said, "Chinese take out?" I started laughing because I think she would have seen us leave the house to pick it up, but it's cool that we fooled her!


Yesterday I had a small going away party and I decided to make ice cream with caramel. This is what I had for dessert after eating the stir fry. I don't know what I did wrong, but when I was making the ice cream it was lumpy and looked like cottage cheese, so when I ate it today there's like frozen balls that I could chew. It's still good though!


Beef Stew


 Ingredients :

- Beef
- Red wine
- Flour
- Salt & Pepper
- Chicken stock
- Dry bay leaf
- Mushrooms
- Onions
- Carrots
- Garlic
-Potato  
- Thyme

Dry the meat before frying it



Fry it


Take it out


Drain the oil and leave a little


Throw in the onions and garlic, stir.


Add the potatoes, stir


Add the carrots, stir


Sprinkle a little flour, stir


Add the meat, stir


Pour in the whole can of chicken stock, stir


Add enough wine to cover the meat


Like so. Add thyme or what ever herb. Don't stir. 


Add in the bay leaf 

 When you have all the ingredients in the pot, cook for 1 hour! (until the meat is tender)


Add some mashed potatoes and you're good to go!

Straw/Berrie Ice Cream

Ingredients: 
4 Egg yolks
2 Cups of whole milk
1 Cup heavy Cream
1/2 Sugar
& Berries




1. In a sauce pan on low heat, add the cup of milk and heavy cream. 
2. I forgot to take a pic, but in another bowl, whisk the egg yolks and sugar.
3. Take a ladle and slowly pour the milk into the eggs and whisk so that the eggs don't cook.
4. Add that mixture and put it back into the saucepan. 


 5. Take your berries and blend them. In my case they were frozen.


6. Add the berries into the mixture and whisk. 


 7. Pour into the ice cream maker


8. Put it in a container and put it in the freezer.

Garlic Parmesan Chicken

Today I made some garlic parmesan chicken and I will share with you a step by step process on how to make these delicious treat! I am not a cook book, I am a cook so I will not have measurements. Eye ball it and make it your own recipe! Don't be shady with the seasoning too!

Here is what you need: (again, you are the chef so you don't have to use these exact seasonings)
  1. Chicken wings
  2. Parmesan cheese
  3. Butter
  4. Garlic or garlic salt
  5. Salt
  6. Cumin
  7. Pepper
  8. Onion powder
  9. Oregano 
Ignore the wine and knifes, you don't need that


Take your chicken wings and season it with salt and cumin 

*IF YOU HAVE A DEEP FRYER - USE IT!!!
Deep fry your chicken for a total of 15-20 minutes on high and for the first 5 minutes, cook with the cover on. Then take them out and drain them. If you have another batch repeat.


Put the first batch back in the pot to get it extra crispy for another 15-20 minutes. And again with the second batch. (If only I had a deep fryer!)


 In a bowl, melt some butter (enough to cover all your wings) and add your seasonings. In this case, pepper, garlic powder, oregano, onion powder and stir.


Pour the seasoned butter all over the chicken and mix well.


Last but not least, add the parmesan cheese and toss.

And there you have it! Enjoy your creation of garlic parmesan chicken!

There are no exact measurements, do it to your own liking.

  1. Butternut Squash
  2. Mushrooms
  3. Kale
  4. Shredded Parmesan Cheese
  5. Tortilla

- In a pot melt some butter
- Add in cut up squash (cubed) and season with cayenne pepper, onion powder, salt and pepper
- Add in mushrooms and a little bit of olive oil, cook for about 10 minutes until the squash becomes soft
- Add in kale and season everything with salt, cook for 5 minutes
-Put aside and heat up pan with a little bit of butter on low heat
- In the pan add one tortilla and sprinkle as much shredded parmesan cheese and then add a scoop full of the veggies
- Place another tortilla on top and put the heat on high for 1 min and then flip it until golden brown (or however you want it)
- And you're done!
